What to Cook This Week
my favorite chocolate treats + new recipe for Chocolate Greek Yogurt Mousse
I’ve been doing a lot of work transferring recipes from my old site over here to the Substack archive. Since Valentine’s Day is this week, I prioritized getting some of my favorite chocolate recipes over here. I’m going to confess it been too long since I’ve had brownies, and may be baking a batch of these bittersweet ones for myself (there’s also a milk chocolate brownie recipe, too, if that’s more your speed).
My French Chocolate Cake is a classic in our house, and one that gets better with age. If you’re pressed for time during the week, and want to get a jump on baking something this weekend, then this is the recipe for you!
If you want to try your hand at homemade truffles, I’ve got two for you to choose from: Clementine Chocolate Truffles and a vegan Tahini, Date & Chocolate Truffle that’s refined sugar-free and highly addictive. Cookie lovers of a certain age might fall in love again with my recipe for a classic chocolate snap from my childhood. Nabisco hasn’t made this cookie in decades. Now you can recreate it in your own kitchen.
Now that we’ve got the chocolate bit out of the way, let’s talk about what else I’ll be cooking this week. There’s definitely a batch of my shredded chicken on the roster for weekend meal prep. A friend asked for some of my starter, so that was a good reason to rescue it from the back of the fridge. If you ever think your starter is dead, trust me it isn’t. Take a look at this video of a neglected starter before and after. I’ve already got some sourdough pizza crust in a bucket in the fridge ready to use this week.
I’ll be making a batch of these protein-rich buttermilk pancakes every other week. I love to serve them with a drizzle of maple syrup, fresh berries, and a dollop of Greek yogurt for an extra protein boost.
It’s been a while since I’ve made this chicken cauliflower fried rice, so that’s a contender for the week ahead, although I may swap in shrimp.
