Erin French of The Lost Kitchen fame sent out a granola recipe in her most recent newsletter. Many of the ingredients were standard to what I use in my own recipe. My curiosity was piqued, though, by the addition of egg white. I immediately understood it would add extra crunch to granola during baking, and while adding egg white strips granola from its normally vegan roots, I was game to give it a go and made some further tweaks to my go-to granola method along the way.
