Buffalo Cauliflower Bites
with Greek Yogurt Buttermilk & Chive Dipping Sauce
These Buffalo Cauliflower Bites are one of my favorite appetizers to make. They come with the added bonus of being a good way to meet my daily fiber needs since cauliflower is a great source of fiber. They can also double as a side dish if you want something tasty and fun to pair with a burger or sandwich—who made the rule that it’s either a salad or fries?
Buffalo in the title should clue you in that these are spicy. The heat creeps up after one or two bites, so don’t skip on the dipping sauce which lends a cooling, soothing counterpart to help tame the heat. Paired together, one serving of these bites with the Greek Yogurt Buttermilk & Chive Dipping Sauce is also a vegetarian protein-rich option for anyone tracking macros (combined it’s 13g of protein).
The trick to the cauliflower browning properly, instead of steaming in the oven, is to preheat your oven with a baking sheet inside it so the cauliflower sizzles the second it hits the pan. Leftovers heat up well in the air-fryer, though I’ll confess to sometimes eating them cold straight from the fridge. —xo, j.
