Sausage & peppers sauteing on a flat top is the perfume of the summer street fairs of my youth. They were also a favorite of Mikey’s. I must confess I’ve never been a huge sausage fan myself, except for chevalatta, a thin, coiled cheese & parsley sausage we ate growing up.
Recently I discovered Bilinski’s. Their line is all chicken sausages with a straight-forward list of ingredients, and they’re casing-free. I love every flavor I’ve tasted so far, and the breakfast sausages they sell are the best I’ve ever eaten. They’re also sold under a private label, Nature’s Promise, at my local grocery store, Hannaford’s, for $2 less per package, too.
Using the air-fryer makes this a one-pot meal that cooks in about 20 minutes. The peppers and onions get a five minute head start before the sausage goes in. The recipe is for one serving but can easily be doubled. If doubling this recipe, the amount of peppers may seem too much for your air-fryer but they cook down to about half the volume, so don’t worry.
I love brioche split-top hotdog buns, and serve it this way to channel the street fair vibes. You can use ciabatta, hero rolls, serve this over rice or toss with pasta, or just enjoy the main event with any other sides or bread. Enjoy! —xo, j.
